Dr Choe works at Glasgow Caledonian University in the UK. She is a visiting professor at Hue University, Vietnam.

She obtained her PhD in Tourism Management and Cultural Anthropology from The Pennsylvania State University. She is currently working on a project, wellness tourism for heritage revitalisation and community regeneration in Vietnam, and consulting with local government.

She has delivered multiple keynotes at tourism and geography conferences in Asia and Europe. She serves as an associate editor for the Tourism Geographies journal, and is a fellow of the Royal Geographical Society. 

She is a co-editor of  the book “Pilgrimage Beyond the Officially Sacred” published by Routledge.
